Health benefits:

Shiitake has traditionally been used in the East Medicine to boost the immune response, improve gut and oral microbiota, protectig mucous membranes from oral disease and infections.


Properties:

Shiitake is rich in bioactive molecules, micro and macronutrients, minerals, amino acids, vitamins, enzymes, fibres and secondary metabolites. The amino acids include significant amounts of glutamic acid, also called “brain food”, which stimulates the production of neurotransmitters and the transport of potassium in the brain. It contains high levels of polysaccharides (beta-glucans), including Lentinan, a branched beta-glucan (β 1-3 β 1-6), which has shown significant immunomodulating properties. A particularly effective substance contained in Shiitake is eritadenine, considered the most important bioactive component responsible for lowering cholesterol levels.
