Propiedades
Conocido también como “Re de los hongos”, el Shiitake ha sido tradicionalmente utilizado en Oriente para potenciar la respuesta inmunitaria, promover la longevidad y mantener la salud y el bienestar psicofísico.

Entre los aminoácidos se encuentran buenas cantidades de ácido glutámico, llamado también “brain food”, un nutriente para el cerebro que favorece la producción de neurotransmisores y el transporte de potasio a nivel cerebral.
Contiene elevados niveles de polisacáridos (betaglucanos), entre los que destaca el Lentinan, un betaglucano ramificado (β 1-3, β 1-6) que ha evidenciado importantes propiedades de inmunomodulación.
Una sustancia particularmente eficaz contenida en el Shiitake es la eritadenina, considerada el componente bioactivo más importante responsable de la reducción de los niveles de colesterol.
